High Peaks Distilling

World-class Whiskey and Bourbon crafted in the Adirondacks. Founded by John Carr of the Adirondack Brewery in 2016 High Peaks Distilling is a Brewer's Distillery. Mr Carr and Head Distiller Aaron Koch have produced thought-provoking Whiskey and Bourbon. Our spirits are distilled using replica copper pot stills used in the legendary Whiskey producing regions of Scotland. This process results in a clean, light spirit. All mash is brewed, fermented, and bottled at the Adirondack Brewery. The whiskeys are laid to rest for a minimum of two years, until we feel the spirit is worth sharing. Come in and take a tour, meet with our distillers, and watch the process of blending the malt, brewing and fermenting the mash through distillation. High Peaks introduces CloudSplitter, a single malt whiskey named after the tallest peak in the Adirondacks, Mount Marcy. CloudSplitter provides a fresh, clean spirit with savory whiskey notes. CloudSplitter was awarded a Bronze medal in April 2018 at the Great American International Spirits Competition. Our Night Spirit is a straight bourbon.
